I’ve teamed up with the amazing folks over at SUPERPRETZEL to create a recipe featuring their amazing new cheese stuffed soft pretzel bites. They come in three different varieties: pub cheese, mozzarella and pepper jack. For this recipe, I decided to use one package of mozzarella  stuffed pretzel bites and one package of pepper jack. If you’re not a fan of jalapeƱo no feel free to use two packages of mozzarella soft pretzel bites. 

Cuban Carne Con Papa Meets Beef Bourguignon Recipe

This recipe is an amalgamation of Cuban Carne con Papa and Julia Child's Beef Bourguinon. I made Julia's Child's recipe to a T years ago and my mom rolled her eyes saying, "Eso es carne con papa, sin papa."  I felt defeated but there was something to her statement that resonated with me. The recipes are similar, although beef bourguignon is a bit more involved. I set out to find a my own version and marry the two dishes some how. This is what I came up with.

I hate HATE chunky Artichoke Spinach dip. I hate having strings of spinach getting stuck in my teeth. So when I started playing around with this recipe, I knew it would be a creamy dip, no giant chunks over here. Ever since my days in the early 2000's of slumming it at Chili's for their 2 for 1 drink specials, I've been obsessed with Artichoke Spinach dip.

When I was really into the Keto diet, this recipe was a staple in my house. I'm not longer on a strict diet, but I still LOVE this version of chicken parmesan. It's basically parmesan cheese crusted chicken breast, what's not to love?
